Sugar Cookies

3    cups all-purpose flour
1    teaspoon baking soda
½   teaspoon salt
1    cup (2 sticks) unsalted butter, at room temperature
1    cup sugar
2   large eggs
2   teaspoons vanilla extract
     Colored sugar and multicolored 
    Sprinkles, for decorating

1.       In a medium bowl, whisk together the flour, baking soda, and salt.

2.     In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy.  Beat in the eggs, then the vanilla.  On low speed, gradually beat in the flour mixture.

3.     Divide the dough into thirds, shape each piece into a disk, and wrap in plastic.  Refrigerate for at least 2 hours, or overnight.

4.     Preheat the over to 350 degree F.

5.     On a lightly floured surface, roll out the dough 1/8 inch thick.  Cut out Christmas shapes with cookie cutters and place 2 inches apart onto ungreased baking sheets.  Decorate with colored sugar and sprinkles.

Bake for 10 minutes, or until the edges begin to brown.  Use a skew to make a hole large enough for a ribbon to fit through.  Let the cookies cool on the baking sheets for 2 minutes, then transfer to wire racks to cool completely.
