Basic Pancakes

Prep time: 3 minutes
Bake time 2: 4 minutes

2 cups baking mix
1 cup whole, low-fat or nonfat milk
2 eggs or ½ cup best of Egg

Mix until blended. Batter will be lumpy. Drop by scant ¼ cupful onto hot griddle. Cook until bubbles begin to break on top. Turn and cook until golden on bottom.
Makes 14 pancakes.

Variations:

Blueberry Pancakes: Stir 1 cup fresh or frozen (not defrosted) blueberries into batter.

Bananas Pancakes: Stir 1 cup chopped ripe Banana into batter.

Maple Pecan Pancakes: Stir 2 tablespoons maple Syrup and ½ cup chopped pecans into batter. Serve with maple syrup.

Cocoa Chip Pancakes: Stir 2 tablespoons Unsweetened cocoa and ½ cup mini chocolate chips into batter
