Tarragon (Artemisia Dracumculus)

This is a perennial herb that grows to a height of 24 inches and has yellow flowers. It is best planted in full sun and fairly dry soil. The best way to propagate this herb is by divisions or cuttings. Fresh leaves of this herb are used for Tarragon Vinegar, Tarier sauces, salad dressings, in salads, poultry, cheese dishes, egg dishes, and Orange Bread. Tarragon Vinegar can be made by covering freshly washed leaves with cider vinegar in a bowl. The bowl should be covered and allowed to soak for approximately two weeks, after which it may be strained and bottled for later use.
