Shallots (Allium Ascalonicum)

This is a perennial that grows to a height of 24 inches. Shallots are propagated in the same manner as garlic, by separating the cloves. It should be planted in full sun, and good soil. Shallots should be harvested in late fall after leaves ripen. The leaves of shallots may be used in place of chives. Shallots look like small onions and are used in the same manner, but in smaller quantities. Is has an exquisite flavor of its own. It may be used in fresh peas, salads, salad dressings, meat loaf, red cooked greens, and baked dishes.
