Lemon Balm (Melissa Officinalis)

This herb is a perennial which grows to a height of 2 feet with white flowers. It should be planted in fairly moist soil and partly shaded. Lemon Balm is used fresh in beverages like mint. The dried leaves are widely used for tea, in salads, and in all meat dishes.
