Fennel (Foeniculum Vulgare)

This is a perennial that grows to a height of 5 feet, and is propagated from seeds. Fennel should be grown in full sun in good soil. The heads are heavy, with yellow flowers and should be staked or supported.

The stems of Fennel can be used like celery. Seeds are used in teas and bread. The seeds and leaves add a licorice flavor to soups, chowder, fish, pickles and fish sauces.
