Raspberries: The most expensive, delicate and exquisite of berries. Available from May through August, they are also the most perishable. Select carefully, store in the refrigerator as soon as possible and use within a day or so. You don't want to lose even one of these jewels. Black raspberries are the same color as blackberries, but are smaller with tiny seeds. Red rasp- berries are the same size but have a slightly more delicate flavor.

How to Choose and Store:

Choose fresh-looking, firm berries. To store, pour on a shallow tray, remove soft or bruised berries. Store in refrigerator, unwashed. Use as soon as possible and wash just before using.
