Magnificent Melon Magic

Melons conveniently come in their own serving dish, so make the most of it. Cut them in half or wedges, accent the flavor with a sprinkle of lemon or lime juice. Fill the center with bright strawberries, deep purple blueberries or your favorite sherbet.

Main Dish Melon: Thoroughly chill melon. Cut in half and remove seeds. Remove the meat and cut in cubes. Combine with crab or chicken salas and serve in the shell. Garnish with watercress.

Melon Chiffon Pie: Colorful melon balls added to lemon or lime chiffon pie make an exquiste dessert. Top with whipped cream and toasted coconut. Frothy, cool and elegant!

Melons all Year? Why not? Fill freezer containers with melon balls, leaving about an inch of space. Stir one cup sugar into cups cold water until dissolved. Pour over melon balls to cover. Seal, label, freeze and enjoy all year.

Nature's Fruit Basket

No matter what time of the year, there is always a fruit available which will make its own lovely container. Summertime is perfect for a mélange of fruit in a watermelon half, accented with skewers of brightly colored fruit. You can use strawberries, cubes of fresh or canned pineapple, cool green slices of Kiwi fruit and orange globes of melon, all speared on skewers to give a lift to your watermelon fruit bowl.

To make the watermelon fruit bowl (you may use the same technique on grapefruit, oranges, melons, papayas or seven limes), draw a light line around the middle of the fruit for a guideline, Then using a sharp knife, make a diagonal gashes toward the center of the fruit. The size of the knife blade will determine the size of the "saw-tooth" edge of the fruit. By the time you have encircled the fruit, it will come apart in two halves.

Remove the heart of the watermelon in one large piece and cut in cubes. A melon baller may be used to remove the rest of the fresh, avoiding the seeds. Thoroughly chill the melon shell and all fruit to be used.

For extra elegance, pour over come chilled Rose wine, kirsch, or Curacao.
