Grapes and Recipes
|
American Type grapes are grown in eastern and central United States and are called "slipskins." The skin of these grapes separates from the pulp easily but the seeds adhere tightly to the pulp. Squeeze them and the insides "pop" right out! Four popular varieties of American type grapes are blue Concord, amber to white Nagara, purplish-red Catawba and pink Delaware. European Type grapes are grown in California of Arizona. The seeds are easily removed but the skin sticks tightly. Among the many excellent varieties of commercial importance are the green-white to light-gold Thompson Seedless, light-red to red-purple Emperor, brilliant to dark-red Tokay, cherry-red to red-purple Cardinal, deep purple Ribier, green-gold Muscat and white seedless Perlette. How to Choose and Store: Choose firm, fresh looking grapes. Avoid those that are shriveled or soft at the stem end. Store in refrigerator. When ready to use, hold the bunches under cold running water and drain to dry. Freezing....Make seedless grapes a year round delight. Wash, strip from the stems and spread on shallow trays to freeze. Pour the frozen grapes into plastic bags. Use while still partially frozen. |
