Gooseberries

Gooseberries: Ranging in color from pale green to red, they are tart, usually small, berries with rather hard, tiny seeds. Available in limited quantities from April through August, depending upon locality.

How to Choose and Store:

Choose fresh-looking, firm berries. To store, pour on a shallow tray, remove soft or bruised berries. Store in refrigerator, unwashed. Use as soon as possible and wash just before using.

Stewed Gooseberries

1   quart gooseberries
1½ cups each sugar and water

Wash berries, remove blossoms and stems and discard soft berries. Simmer water and sugar together for about 5 minutes. Add berries and simmer for 10 to 15 minutes. Serve as a breakfast sauce or dessert with a little whipped cream.

Makes about 6 servings
