Bananas and Recipes

How to Choose and Store:

Unlike most other fruits, bananas do not ripen satisfactorily on the plant, but ripen to their eating best off the plant. So if the bananas on the produce stand are too green for immediate use, just be aware that they will ripen at home. Good bananas are plump and firm. When yellow with green tips, they are ready for cooking or eating raw, although some people prefer them fully ripe with brown flecked skin for eating. After they reach the stage you like, refrigerate. Once the ripening process has been stopped by cold, it never starts again. If the skins turn brown under refrigeration, don't be alarmed as the inside will remain attractive.... and good. The old story about "don't put bananas in the refrigerator" is as outdated as button shoes!
