Apricots and Recipes

How to Choose and Store:

Choose those with a golden to yellow-orange color, plump and fairly firm, and free of blemishes or bruises. Store ripe apricots in the refrigerator. Allow green ones to ripen at room temperature before refrigeration. They are fairly perishable and should be used soon after purchase. If you are lucky enough to get some on sale, they freeze or can equally well.

 

Apricot Parfait

Allow vanilla ice cream to soften slightly. Alternate layers of ice cream with apricot puree in parfait glasses or tall sherbets. Freeze until firm. Serve with a sprig of mint.
