Old Fashioned Apple Pie

Tart, juicy apples are a must for the best apple pie. If the ones you have are on the sweet side, add a teaspoon or so of lemon juice.

6 cups pared, sliced apples
1 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoon rum (optional)
Pastry for 2 crust 9-inch pie

Blend sugar, cinnamon and nutmeg with apples. Sprinkle with rum and toss lightly. Pile into pastry-lined pie pan. Cover with top crust. Bake in a moderately hot oven 400 degrees for 50-60 minutes until crust is nicely browned and apples are tender when tested with a fork. Serve with wedges of cheese or topped with a generous scoop of ice cream.
