Apples and Recipes

Dutch Apple Cake

1 cup packaged biscuit mix
1 tablespoon sugar
1 egg
1/4 cup milk
3 1/2 cups sliced, pared cored tart apples
2 tablespoons sugar
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
2 tablespoons melted butter
1/2 cup apricot jam

Mix biscuit mix and sugar. Combine egg and milk and stir into biscuit mix. Spread in greased 9-inch baking dish. Arrange apple slices overlapping on top of dough. Combine sugar, nutmeg and cinnamon and sprinkle over apples. Top with butter. Bake in moderately hot oven 400 degrees for 40 to 45 minutes, or until apples are tender. Remove from oven. Beat the jam with a fork and spread on top. Peaches, plums or nectarines are just as good as apples, in season!
