Apples and Recipes

No Fuss Applesauce

6 medium apples, quartered and pared
Sugar, or brown sugar, or honey, to taste

Combine apples and water in a covered saucepan and simmer 15 to 20 minutes until tender. Stir in sugar or honey until dissolved. Serve "as is" if you like chunky applesauce, put through a sieve or food mill if you like it smooth. Vary flavor by adding nutmeg, cinnamon, lemon or orange juice, cloves or mace. Makes about 3 cups.

Variation: Cook as above, but with the skins on. Put through a food mill or sieve, and sweeten and season to taste.

Frozen Applesauce: Prepare as above, cool, fill freezer jars or containers to within an inch of the top. Label cartons, seal and freeze.
