| Apples....Big
one, little one, red, yellow or green, we all love apples. Stewed, baked,
sauced, pied, crisped, puddinged, frittered, saladed or desserted -
no limit to their uses and they are available all year around.
|
| Apricots....Glorious,
golden globes of exquisite flavor! This luscious fruit is in and out
of season before you know it, so enjoy them while you can.
|
Avocados...The
bright green Fuerte avocado, grown from October to April, is at its peak
in the market now. From April to October, look for the Hass avocado, with
its dark pebbly peel. Both make wonderful eating. |
| Bananas
are always with us, so it is easy to take them for granted. Don't, though,
as there are so many interesting ways to use bananas to make meals a
little different.
|
Summertime
and berries are synonymous, but there are many kinds of berries. We'll
talk about the most familiar ones, whether you buy them in your market
or are lucky enough to be able to pick them yourselves. Berries are
always picked vine-ripened, though, so use them quickly after you
get them.

DI FRUTTA FRESCA
(FRESH FRUIT SALAD)
2 pounds
assorted fresh rip fruit
(sliced peaches, melons, nectarines, plums,
apples, cherries, figs and berries) 1 cup
orange juice 1/4 cup sugar
2 tablespoons orange liqueur (optional)
grated peel of 1/2 lemon
1 quart vanilla gelato or premium ice cream |
In large bowl, combine
all ingredients except gelato. Cover and refrigerate at least 4 hours.
Serve with gelato.
*Note* The trick to this dish; combine as many varieties of fruit as
possible. Allowing them to co-mingle in this citrus-juice marinade only
enhances their fresh flavors. |

| Cherries....It's
really gilding the lily to do anything with large, juicy sweet cherries,
whether they are big red ones or delicately tinted Royal Annes, other
than enjoy eating them out-of-hand.

| The wonderful world
of citrus fruits! Tangy yellow grapefruit....bright shiny oranges....sparkling
green limes....golden-orange tangerines....gleaming lemons....picture
pretty in fruit bowls and arrangements and indispensable to every good
cook. A squeeze of lemon or lime on fish, vegetables or salads achieves
the same effect that a good perfume does for a woman....makes a good
thing even better!

Nectarines
are not a cross between a peach and a plum. It is a smooth skinned peach
and can be used in place of peaches in recipes. |
