Cranberry-Glazed Brie

A tasty prelude to dinner begins with a round of Brie dressed in a red cranberry sauce.

1     (12-ounce) package fresh cranberries
¾    cup firmly packed brown sugar
1/3 cups currants
1/3 cups water
1/8 teaspoon dry mustard
1/8 teaspoon ground ginger
1/8 teaspoon ground cardamom
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1     (35.2-ounce) round Brie
       Garnish: fresh fruit
1.    Combine the first 9 ingredients in a medium saucepan.  Cook over
       medium saucepan.  Cook over medium heat, stirring constantly, 8
       minutes or until the cranberry skins pop.  Set aside and let cool.
2.    Remove the rind from the top of the Brie, cutting to within ½” of

       the outside edges.  Place the cheese on a baking sheet,  spoon the
       cranberry mixture over the tip of the Brie.  Bake at 300 degrees
       F. for 20 to 25 minutes or until the cheese is softened, but not
       melted. 
3.   Transfer the cheese to a serving platter; garnish with fresh fruit.

      Serve with assorted crackers.

Yield: 18 appetizer servings.
