Cinnamon-Coffee Pecans
This appetizer blends the delicious tastes of cinnamon, coffee, and coconut.

3     cups pecan halves
1/2  cup sugar
1/4  cup water
1      tablespoon ground cinnamon
       A pinch of salt
1      teaspoon coconut extract

1.  Spread the pecan halves on an ungreased 15"x10"x1 jellyroll pan.
     Bake at 350 degrees F. for 10 minutes, stirring after 5 minutes.
2.  Combine the sugar and nest 4 ingredients in  medium saucepan.
     Cook over medium heat, stirring frequently, until the sugar
     dissolves.  Add the pecans and cook 3 minutes, stirring constantly.
     Remove from heat and stir in the coconut extract.

Spread the pecans on a hot greased jellyroll pan. Bake at 300 degrees F. for 15 to 20 minutes, stirring every 5 minutes. Let cool completely and store in an airtight container.

Yield: 3cups.
